Borage is easily recognizable because of its intense blue flowers. Besides the traditional blue cornflowers, there is not much in nature that creates this special cobalt blue color. Borage reminds me of kneeling dancers, because its flowers likewise bow to each other. It is always visited by bees and other insects in droves and it is not only the bees that enjoy the flowers - they can also be eaten by us humans. Even the stems can be cooked and eaten as vegetables, but they are prickly, so wear gloves when picking them.
A single borage plant, if it really thrives, can cover up to half a square meter and each plant can bear hundreds of flowers and keep on producing new ones.
